When going to the Edelbrock carb, you just need the brass adapter to go from 5/16 to 3/8 inverted flare. Most parts stores should be able to get it. Summit or Jegs has them too.

When I rewired my '72 express, I set it up so that it has to be initially started from the lower helm. Then, using a set of 5 pin sealed relays, I have a switch to stop and start from up top. If the truck you got the heads from was a 1 ton 318 with a 2bbl carb, look real close to be sure the center crossover is exhaust and not coolant. 1967-72 1 ton truck and motorhome with 2bbl. If your engine is tuned right, 3000rpm is too low wot. You need to be able to hit at least 3800. I definitely would not put a steeper pitch on. If anything, I would step back an inch or so. If I ever repower my 32, I think I am going with Oldsmobile engines. I don't like things to be easy, apparently. I have used Olds engines in a few Chevy trucks with amazing results. If your engine has good oil pressure, don't worry about the bottom end. You will never change your compression enough with a valve job to do any bottom end damage, unless it is really beat. It makes sense. I have an express that is all open around the lower helm. I always notice there is an exhaust smell at certain speeds under the hardtop. Never worried about it because it comes and goes. Never had an issue in the cabin, but that's a whole different layout.
