Someone converted their big M to outboards, but they had to massively beef up the transom.
Not sure an outboard would deliver superior mpg with those two props dragging in the water. Seriously; and it'd have to be a 4 stroke OB at the very least.

If you think our boats are complicated, be happy you don't have a Chris Craft with their freaky SB Chevy conversions. They attached the trans to the FRONT of the motor, to get the oil pan lower (or some other dopey reason). The flywheel end was then in front! Adding to the confusion, the distributor...

An impeller replacement is not a bad replacement job. Rebuilding the entire pump with its bearings and mechanical seal is another issue!

Be sure to order a slightly larger ID than the pipe calls for--like an 1/8 inch. Makes assembly (and the all important disassembly later on) much easier. And it doesn't leak, either--done it that way many times.
