Pull them out and put twin four stroke outboard on it

I actually have another 32' Express that has been gutted out. No engines or interior. It would be great for putting outboards behind it. I found this and thought it would be cool to make that Hull into a center console boat with twin outboard engines. Just need to cut the roof off and continue the cockpit floor all the way to the front and yes strengthen the transom.

I'd be interested in the hull with the trailer but not separate.

You really don't need stands to hold the hull. I used railroad tie sections for mine the first time. It's really easy to get the boat off the trailer. I did it with a 20 ton jack and blocks. I've since bought boat stands and you're welcome to the railroad ties.

whats the easiest way to access the outside sides of the engines for the spark plugs? Do people take the exhaust manifolds off?

Put a blanket over the motor and lay on top. Do NOT go messing with that manifold!
