I have a 32 Sedan FB without a built in genset. I purchased a Generac 7117 inverter generator to use with shore power adapters. I have used it a few times buy just hooking it up to shore power. Is there a problem with this method? I was wondering if it is a problem to have the shore power plugged in while running the engines and the alternators also attempting to charge the batteries at the same time as the battery chargers via shore power? Could this damage anything electrical?

Should not be an issue. The batt charger and alternators charge in parallel. The alternator should back off if batts are on top.
As a general rule I turn off my batt charger before cranking to avoid any possible issues but I've also started engines plenty of times with charger on with no issues.....You should be fine.

Just use common sense.
Don't sleep with GEN running.
Place on swim platform.
Install a monoxide detector.
Be safe.
