Sparky :
Several of us have added AC to our boats. You'll find lots of threads on this subject.
I added a 16,500 btu cruisair unit in the wine cellar of my 32 sedan and ran 3 ducts.
A 6" duct up through the floor into the teak cabinet next to the setee. (hot air rises so this area needs the most AC)
A 4" duct runs from the cellar out through the port wall and under the catwalk forward to the small closet and into the v berth.
A 3" duct runs from the cellar through the forward wall and behind the galley counter and fridge to the head.
I installed the water pump under the galley floor near the through hull for the head. I "T"d off that 3/4" hose.
Your system sounds like you could install the compressor in the cellar and the evaporators in the closet and in the small teak cabinet and run the tubes between them.
