The blower affects my CAPAC readings a little but I attributed that to the wires being too close to each other. However, I've never seen the extremes you have mentioned.
I'm with Peter on a ground issue.
May want to check/clean/tighten the grounds from neg batt terminals to the hull ground lugs.
Check the wiring of the Capac. I can't recall off the top of my head how it is wired. I do know the wire that goes down to the transducer can get corroded inside the plastic cylinder housing.
