PEEK has a tensile strength of around 92 MPa, and a modulus of elasticity of 3.7 GPa.
316 stainless steel has a tensile strength of around 500 MPa, and a modulus of elasticity of 193 GPa.
You would need more than twice the diameter of fastener to get the same strength with PEEK as with 316 ss, but even worse, the structure wouldn't feel as strong, since PEEK stretches a lot more.
I think these would be a poor replacement for stantions, where strength and stiffness are essential. For less demanding applications, perhaps they would be just fine. Not worrying about electrolysis is a big plus for plastic.
