Looking for advice on replacing rudder bearings. Before I do it, how much is too much play in the rudders. Also if I have to replace the bearings, what is used for the packing etc. Any help is appreciated.

I have FREE loaner tools for removing the old bearings and sizing the hole (so the new one fits properly). There's photos of the tools and the procedure on the Repair Website:
